Breakfast Pizza

1 Prepared pizza crust. My favorite is the herb crust from Trader Joe’s

2 tbsp olive oil

1 clove garlic

1 lb breakfast sausage, cooked and crumbled

2 cups mozzarella cheese

3-4 large eggs

1 tbsp fresh basil

Preheat oven to 425 degrees.  Roll out pizza dough and place on a pizza pan or cookie sheet.  Bake crust for 10 minutes.  While crust is baking, mince clove of garlic and stir into olive oil.

Remove par baked crust from oven and brush with garlic oil.  Top crust with crumbled sausage, then with mozzarella cheese.  Carefully crack eggs on top of pizza making sure not to break the yolk.  Place pizza back in the oven and heat until cheese is melted–approx 7 minutes.

Remove pizza from oven and top with fresh basil.

Slice pizza and enjoy!
