Egg Salad

Okay, so you probably read the title of this recipe and immediately thought of the disgusting “slop” you get in the cafeteria lunch line. I promise this is NOT the case!

WTHR Channel 13 reached out to me about a fun recipe for the summer and I imagined a delicious recipe for a romantic picnic for two. While I won’t be going on any kind of date this summer (#singlegirlproblems), I’d like to live vicariously through all of you and hope that you make this recipe and share it on your romantic (or family) picnic.


Egg Salad
1 dz eggs boiled and chopped coarsely (hard boiled egg cooking instructions)
1 small red onion, chopped
4 celery stalks, chopped
1 good handful of fresh dill, finely chopped
½ cup mayonnaise (homemade mayo)
2 Tbs Dijon mustard
½ small lemon juiced
Salt and Pepper to taste

Combine all ingredients in a large bowl. Mix until contents are evenly coated. Eat as a sandwich or with crackers. Store refrigerated in an airtight container.

WOW!!!! I spent 15 years in upscale restaurants; I know my way around a kitchen; I love fried okra; and I have to tell you, I made your shrimp and grits and it was the BOMB!!!!! Good Lord, there is nothing I like more than great food, and your recipe is going to be a life long favorite; grew up in the South, grew up eating fresh seafood, and you just killed it with that recipe; please keep posting; you have a huge fan here (for what its worth);
