Okay, so you probably read the title of this recipe and immediately thought of the disgusting “slop” you get in the cafeteria lunch line. I promise this is NOT the case!
WTHR Channel 13 reached out to me about a fun recipe for the summer and I imagined a delicious recipe for a romantic picnic for two. While I won’t be going on any kind of date this summer (#singlegirlproblems), I’d like to live vicariously through all of you and hope that you make this recipe and share it on your romantic (or family) picnic.
1 dz eggs boiled and chopped coarsely (hard boiled egg cooking instructions)
1 small red onion, chopped
4 celery stalks, chopped
1 good handful of fresh dill, finely chopped
½ cup mayonnaise (homemade mayo)
2 Tbs Dijon mustard
½ small lemon juiced
Salt and Pepper to taste
Combine all ingredients in a large bowl. Mix until contents are evenly coated. Eat as a sandwich or with crackers. Store refrigerated in an airtight container.
