While researching ideas for WTHR segments, I learned that there is such a day as National I Love Food Day! Guys…this made me so happy! There’s a day dedicated to loving food. I’m convinced this day was created just for me.
Once I found out what day it was, I reached out to my friend Alyssa Raymond to find out some of her favorite foods. I figured if she’s going to celebrate with me, my goal was to get her to appreciate National I Love Food Day just as much as I do. Alyssa loves pizza, so we decided to fancy it up with a flatbread.
I really enjoy making flatbreads because it’s about light, fancy toppings, versus pizza crust. Don’t get me wrong. I love pizza, but eating a flatbread just makes you feel fancy!
You can play up a flatbread how ever you want. It can be all veggie. It can be all meat. It can have a combination of the two, or it can simply be tomato sauce, cheese, and fresh basil. I am 100% a topping girl, so we came up with a combo that included plenty!
Here’s what we came up with:
2 pieces of Naan
Shredded Mozzarella Cheese
Preheat oven to 400 degrees. Place the naan on a foil lined baking sheet. Toast naan for 7-10 minutes.
While naan is toasting prepare the pesto.
Remove naan from oven and spread a thin layer of pesto onto toasted naan. Top with caramelized onions, prosciutto, then sautéed mushrooms. Top naan with a thin layer of mozzarella cheese. Place flatbread back into oven for 5 minutes. Just to melt the cheese.
Remove from oven and top with parmesan cheese.
