Gluten Free Fried Chicken

Someone I consider like the bread to my butter recently found out they have a gluten sensitivity.  So when Naomi Pescovitz, of WTHR, asked me to focus on National Celiac Awareness Month for one of the segments in May, I was eager to pull off something I know they would love.

Now, for me personally, I will eat all the gluten and eat it with pride, but for some, gluten free means life or death, or at least debilitating stomach pains.

For those of you that are dying for my fried chicken recipe I made on @masterchefonfox …this ain’t it! As for my “bread”..luten free or not–still the bread to my butter.

Gluten Free Fried Chicken
1 whole chicken cut into 8 pieces
3 cups buttermilk
1 lemon, juiced
1/2 cup hot sauce (I prefer Frank’s Red Hot)
2 Tbs creole seasoning

3 Tbs creole seasoning
2 cups All Purpose Gluten Free Flour
1 cup Corn Starch
2 Tbs Creole Seasoning
1 Tbs Garlic Powder
1 Tsp Paprika
1 Tsp Onion Powder
1/2 Tsp Cumin
1/2 Tsp Curry Powder
1/2 Tsp Caynne Pepper

2 1/2 Cup Canola Oil

Combine buttermilk, lemon juice, hot sauce and creole seasoning in a large bowl. Add chicken pieces and cover. Refrigerate for 4 hours up to overnight.

Combine flour, corn starch, and seasoning (leaving out 3 Tbs creole seasoning) in a large bowl or brown paper bag.  Remove chicken from buttermilk and season chicken liberally with 3 Tbs creole seasoning.

Dredge chicken through flour mixture and place on a clean baking sheet. Once all chicken has been floured, let chicken sit for 5-10 minutes. While chicken is sitting, heat canola to 325 degrees, in a cast iron skillet and preheat oven to 375.

Test the oil with a pinch of flour to ensure it’s reached the correct temperature (I like to use a candy thermometer as well). Carefully place chicken in oil.  Fry for 5-7 minutes on each side. You should only fry 3-4 pieces at a time. Do not over crowd your pan and remember that your breast will take the longest to fry. Remove chicken from oil once golden brown and place in a paper towel lined baking sheet. Once all chicken has been fried, place baking sheet in oven for 20 minutes to complete cooking.
