Honey Glazed Salmon & Brussels Sprouts (One Sheet Wonder)

Happy National Honey Month!  Honey is my absolute favorite sweeter, and I enjoy it most when using it for savory foods.  Honey has so many health benefits, and Indiana has some of the best honey producers I’ve come across.  I try to bring home a bottle of local honey from everywhere I travel.

One of my go to meals is to roast salmon with veggies.  This honey coated salmon is one of the top requested meals by my clean/paleo weekly clients.  It’s quick, delicious, and doesn’t require a lot of clean up because you can prepare all of it on the same pan!

Salmon
4 filets of salmon (skin on or off)
2 Tbsp. Dijon mustard
2 tsp honey
1 garlic clove minced or grated
1 tsp salt
½ tsp pepper

Brussels Sprouts
1 pound Brussels sprouts trimmed and quartered
1 Tbsp. olive oil
1 tsp salt
½ tsp pepper
2 Tbsp. honey

Preheat oven to 400 degrees. Place salmon on a foil lined baking sheet, leaving room for Brussels sprouts on the other side of the baking sheet. In a small bowl, combine mustard, honey, garlic, salt and pepper. Spoon or brush sauce over salmon.

Toss Brussels sprouts in oil, salt and pepper. Place on baking sheet next to salmon.

Roast salmon and Brussels sprouts for 15 minutes. Remove pan from oven. Using a spatula, place Brussels sprouts in a bowl. Drizzle honey over Brussels sprouts and toss.

Place Brussels sprouts and salmon on a plate and enjoy!
