What do you do when the birthday girl loves ice cream and pizza? You make ice cream pizza! Alyssa Raymond of WTHR is celebrating a birthday and I was lucky enough to celebrate with her by doing a segment. I had so much fun getting creative. I came up with a quick and easy recipe that included the things she loves.
I love this recipe because you can use whatever flavor combinations you like. Switch up your cookie flavor, ice cream flavor, and candy flavors. Customize things to what you love the most!
Happiest Birthday, Alyssa!
Ice Cream Pizza
1 package chocolate sandwich cookies such as Oreos
1/2 cup chocolate chips, melted
1 pint ice cream (whatever flavor you like)
1 cup chocolate chips, divided
1/4 cup heavy cream
1/2 cup chocolate candies, such as M&Ms
1 can whipped cream
Using a food processor or food storage bag and a rolling pin, crush cookies as finely as possible. Stir in melted chocolate and form into pizza pan. Place crust in freezer for 10-15 minutes.
While crust is in freezer, remove ice cream from freezer and let sit.
Remove crust from freezer and spread softened ice cream into crust. Make as thick or thin of a layer of ice cream as you’d like. (I like it thick!)
Place pizza back in freezer and let sit for 20 minutes.
While pizza is solidifying, heat heavy cream for 1 minute in microwave. Place 1/2 cup chocolate chips into a bowl. Pour heated cream over chocolate chips and stir until melted.
Remove pizza from freezer and top with 1/2 cup chocolate chips, candies, and
Once pizza is solid, remove from freezer and top with candies and drizzle with chocolate sauce. Spray whipped cream around edges of crust.
Cut with a pizza cutter and enjoy!
