Lazy Apple Pie

Apples are my FAVORITE flavor of fall (and bourbon, too)! I love going to the apple orchard and I always have tons of things I plan to do with my finds. This apple dessert is great for those who love pie, but hate dealing with the perfection of a pie crust. Before I got really comfortable with a pie crust, I would stand in my kitchen, covered in flour, and cry with a rolling pin in my hand. I have since conquered pie crust, but this dessert is fun, quick, and easy to tackle if you don’t feel like crimping.

Lazy Apple Pie (aka Apple Galette)

1 1/2 c all-purpose flour
1/4 c granulated sugar
1/4 tsp salt
1 stick cold unsalted butter, cubed
1/4 cup ice cold water

3-4 apples, thinly sliced
1 tbsp cinnamon
2 tbsp corn starch
1/2 c sugar
1/2 stick of salted butter
1 egg beaten
2 tbsp turbinado sugar (optional)

To prepare the crust, combine flour, sugar, and salt in a bowl. Add butter cubes and mash butter into flour using two forks. When mixture looks about like the size of peas. Slowly add the cold water and stir until combined and dough sticks together. Dough should not crumble, but should also not be sticky. Knead dough together a couple of times to form a ball/disc and wrap with plastic wrap. Place dough in fridge until ready to use.

Preheat oven to 425 degrees.

While dough is chilling, place butter in a small sauce pan on medium heat. Let melt and cook until bubbly and dark brown bits start to form at the bottom of the pan (about 7 minutes). Combine sliced apples with cinnamon, corn starch and sugar in a bowl.

Roll out dough to about 12 inches. The best about about this is that it doesn’t have to be perfect! Transfer dough to a parchment lined pizza pan or cookie sheet. Using a pie plate or 10 in cake pan, imprint a ring into the center of rolled out dough. Place the apples on the inside of the ring. I like to lay them fanned out in a circle. Pour browned butter over apples. Fold the crust outside of the ring over apples. There will more than likely be apples exposed in the center. If there is not, that’s totally okay!

Brush crust with egg wash and sprinkle with sugar.

Bake for 20 minutes or until golden brown. Let sit for 10 minutes before slicing (I like the slice mine with a pizza cutter). Serve with vanilla ice cream on top.
