Peach Fritters

I have found the perfect combination for the month of August!

My friends and family know that peaches are one of my favorite fruits and fruit flavors. When The Peach Truck came to town, I ended up with 4 boxes ya’ll…4! I had some of the cutest little helpers when I bought them! 😉

After making 107 jars of Bourbon Peach Preserves, and a fabulous Peaches and Cream Pie, I thought there was no better way to celebrate National Peach Month than to make Peach Fritters with Alyssa Raymond of WTHR.

The Indiana State Fair is the best thing in Indy during the month of August, so of course I found a way to make something deep fried and delicious!

Peach Fritters
1 cup flour
1 tsp salt
1 tsp baking powder
2 tbsp sugar
1/2 tsp cinnamon
2 eggs
1/3 cup milk
1 tbsp melted butter
2 fresh peaches, peeled, pitted, and chopped

1/2 cup granulated sugar
2 tbsp cinnamon
1 cup powdered sugar
About 1/4 cup of milk

{Strongly suggest you complete this step first to ensure glaze and cinnamon sugar is ready for the fritters as soon as they come out of the hot oil} Combine granulated sugar and cinnamon in a bowl. In a separate bowl whisk the milk and confectioners sugar together until the desired drizzling consistency.

Using a whisk, combine flour, salt, sugar, cinnamon and baking powder. Whisk in eggs, milk and butter. Fold in peaches.

Heat vegetable or canola oil in fryer or pan to 375 degrees. Using a medium cookie scoop, scoop rounded scoops of batter into the hot oil. Cook for about 2 – 3 minutes, being sure to flip fritters during frying to ensure they brown on all sides. Remove fritters from oil with a spider ladle. Quickly drain on paper towels or newspaper.

Combine granulated sugar and cinnamon in a bowl. In a separate bowl whisk the milk and confectioners sugar together until the desired drizzling consistency.

Coat with sugar on both sides, and/or glaze tops of fritters.
