I love the fresh produce of the summer. Being a southern girl, it was typical for me to jump in my grandfather’s pick up truck and go for a drive. We’d stop on the side of the road and buy the most delicious watermelon (from some random guy). We’d get home, cut it up and devour it!
Last year I became obsessed with pickling watermelon and came up with this quick and easy recipe. I know it sounds a little crazy, but trust me–you are going to love it!
1 Seedless Watermelon, cut into bite size cubes
1 cup Apple cider vinegar
1/8 tsp peppercorns
½ cup water
1 clove garlic
1 Red onion, thinly sliced
½ cup Feta cheese
½ cup basil, julienned or torn
Salt & Pepper
In a small saucepot, bring vinegar, water, peppercorns, and garlic to a boil. Reduce heat and let simmer. Remove from heat and let sit 10-15 minutes.
Meanwhile, cut watermelon into bite size pieces and place into a heat safe bowl. After pickling liquid has sat, pour liquid over watermelon while straining remnants. Let watermelon sit for 10 minutes, up to 1 hour.
While watermelon is sitting, slice red onion and julienne basil.
Drain watermelon and place back in large bowl. Combine red onion, feta, and basil. Toss with salt and pepper. Eat right away or chill before eating.
