It’s National Peanut Butter Day! Thank goodness Alyssa Raymond of WTHR loves pad thai, because this come very close! I decided to walk on the savory side of peanut butter and came up with this delicious sesame peanut butter noodle that can be eaten hot or cold, with or without protein.
Sesame Peanut Butter Noodles
1 package brown rice noodles
1 red bell pepper sliced thinly
1 bunch green onion, chopped
1 pound cooked chicken, shrimp, or tofu (optional)
1/2 cup shredded carrots
3 Tbs peanut butter (I prefer natural chunky peanut butter. You can also use any other nut butter you prefer)
1/4 cup liquid aminos
1 tsp sesame oil
1 Tbs honey or agave
1 tsp sriracha (or more if you like it spicy)
2 tsp rice vinegar
1/4 cup chopped peanuts
1 Tbs sesame seeds
1/4 cup cilantro
Prepare brown rice noodles according to package instructions. In a large bowl combine drained noodles, bell pepper, cooked protein, carrots, and green onion.
In a small bowl, whisk sauce ingredients until combined. Peanut butter should be thinned out and there should not be any chucks other than from peanuts if you choose to use chunky peanut butter.
Pour sauce into noodle bowl and toss until all ingredients are evenly coated.
Garnish with peanuts, sesame seeds, and cilantro.
Eat hot or cold.
