Spinach Pesto for National Spinach Day!

2 cups spinach leaves (I prefer baby spinach, but it really doesn’t matter)
1/2 cup walnuts, toasted
2 garlic cloves
1/2 cup grated parmesan cheese
1 lemon, juiced
1/2 tsp salt
1/2 cup extra virgin olive oil

Combine all ingredients in a blender or food processor while leaving olive oil out. Turn on blender and pulse ingredients until roughly chopped. With blender running, drizzle in olive oil. Mixture will begin to come together and form a paste. Make sure all ingredients are blended well.

You can toss this with pasta and 1/2 cup of reserved pasta water. You can spread it on chicken bake it in the oven. You can also drizzle over tomatoes and fresh mozzarella. The sky is the limit!
