I’m not irish, but I love the concepts of Irish foods. Most foods are cooked low and slow to develop lots of flavors. The segments I do for WTHR do not allow for a 3 hour recipe, so I decided something made with pistachios would still celebrate the color of St. Patrick’s Day! Green!
I borrowed this recipe from The Gold Lining Girl. I love how her recipe uses most basic ingredients I have in my pantry. My only suggestion would be to double your cream cheese and butter measurements to make sure you have a good coating of frosting. If you like a thinner layer of frosting, just keep it as is. Most importantly, make sure you toast the pistachios you top the bars with. Toasting your nuts always brings out the best possible flavor. It’s super easy. All you have to do is put them in a pan without an oil or coating. Place the plan over medium-low heat and check them every 2-3 minutes. They should brown a bit and become fragrant. Once they are toasted to your liking, you can turn off the heat and place them on a paper towel (don’t use anything plastic), until you are ready to chop them and use them. That’s it!
