A lot of times, Thanksgiving is a potluck event among families. That means you have to sign up for one or two things, and you strive to make them the BEST things brought to the table. I can’t tell you how much cooking advice and ideas I’m asked for this time of year. I love throwing ideas out there and helping people get their creative juices flowing! This year I teamed up with my new friend Alyssa Raymond from WTHR, to give you some fun ideas for my two favorite Thanksgiving things. Side dishes and desserts! I love turkey and understand why it’s the main event, but side dishes and desserts pack so much flavor and give so much opportunity for creativity!

The first recipe I focused on was fresh apple cake. Don’t get me wrong, I LOVE apple pie, but sometimes it’s fun to put a different twist on one of my favorite fall fruits. Fresh Apple Cake is warm, gooey, and comforting. The tartness from the apples balances out beautifully with warm spices like cinnamon and nutmeg.

I love making apple cake because the process is less labor-intensive than apple pie. You don’t have to do both with pie dough, a rolling pin, and a kitchen full of flour. Fresh Apple Cake can be made in one bowl!

One of the best parts about fresh apple cake is how wonderfully it pairs with salted caramel sauce and vanilla ice cream. The moist crumb from this cake allows the ice cream and caramel sauce to melt into the warm cake, making everything a bit softer and gooier.

This will be the perfect after-dinner treat for you and your family this Thanksgiving. It will be even better as your day-after treat with coffee on Black Friday morning.

Apple Brownie

Apple Brownie

Apple Brownie is warm, gooey, comforting, and goes perfect with the same things you top apple pie with.

Ingredients

Apple Brownie
  • ½ cup butter, melted
  • 1 cup white sugar
  • 1 egg
  • 3 medium apples, peeled, cored, and chopped
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350 degrees. Grease a 9×9 baking dish.
  2. In a large bowl, beat together butter, sugar, and egg until pale yellow and fluffy. Fold in apples.
  3. In a separate bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
  4. Combine wet and dry ingredients just until incorporated. Do not over mix!
  5. Spread evenly into the prepared baking dish. Bake 35 minutes or until toothpick is inserted and comes out clean.
  6. Serve with vanilla ice cream and salted caramel sauce.
