Caramelized Onion & Bacon Dip
I’m not much of a New Year’s Eve party-goer. I’d much rather stay home, in my PJs with some good Chinese takeout and a movie. With friends, of course. Fortunately, I have friends who do just about that every year! I go to their house in my pajama pants, a sparkly tank top, and fuzzy socks. A bunch of us hang out, watch TV, play games, drink cocktails, and EAT!
Staying home seems to be the name of the game for a lot of people this New Year’s Eve, so I thought I would help with some tasty snacks to ring in 2016!
Now, I know the recipe says onions but remember, we’re relaxed, on the couch, with friends. Eat as much as you want!

Caramelized Onion & Bacon Dip
Ingredients
- 3 strips of bacon, chopped
- 2 large onions, sliced
- 2 garlic cloves, minced
- 1-2 sprigs of fresh thyme
- 1 8oz package of cream cheese, softened
- 1/2 cup sour cream
Instructions
- Heat a skillet to medium heat. Cook bacon until crispy. Transfer to a paper towel and reserve for later. Using the bacon fat in the pan, add onions and garlic. Stir to coat in fat. Once coated, toss in the sprig of thyme, and turn heat down to medium-low. Cook for approx 20 minutes. If onions start to burn, turn heat down even lower.
- While your onions are cooking, in a separate bowl, add cream cheese and sour cream. Remove thyme stem from onions and add onions to the cream cheese mixture. Mix well with a spoon or electric mixer. Fold in most of the cooked bacon. Leave a tablespoon or so for garnish.
- Top dip with bacon and serve with chunks of bread and/or crackers.
