Green beer or green dessert is usually the go-to food to celebrate St. Patrick’s Day. I decided to change things up this year and come up with something savory and green. I’m happy to announce that it’s not vegetables!
I present to you my Green Goddess Turkey Burger w/ Zesty Avocado Sauce! This burger is definitely not Irish, but it’s green and delicious! I actually make this for my weekly meal clients from time to time, and it’s always a hit. The best part…it doesn’t have to be St. Patty’s day for you to devour this!
Turkey Burgers w/ Zesty Avocado Sauce
This burger is definitely not Irish, but it’s green and delicious! I actually make this for my weekly meal clients from time to time, and it’s always a hit. The best part…it doesn’t have to be St. Patty’s day for you to devour this!
Ingredients
Burgers
- 1 pound ground turkey
- 3 spring green onion, chopped
- 1/2 cup flat-leaf parsley, chopped
- 1/4 cup cilantro, chopped
- 2 tablespoon fresh dill, minced
- 1 tablespoon fresh oregano, minced
- 1 tablespoon granulated garlic
- 2 teaspoon kosher salt
- 1 teaspoon cracked black pepper
- 1 tablespoon extra virgin olive oil
- 1 cup arugula
- Pretzel buns
Avocado Sauce:
- 1 avocado
- 1 lemon
- 1/2 jalapeno, seeded
- 1/4 cup water
- 1 clove garlic
- 1/2 teaspoon fresh dill
- 1 teaspoon flat-leaf parsley
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
Instructions
- Preheat oven to 400 degrees.
- Combine ground turkey, green onion, herbs, garlic, salt and pepper in a large bowl. Mix until combined, being careful not to overmix. Using an ice cream scoop or large cookie scoop, use 2-3 scoops of the turkey mixture to form patties. 1 pound of turkey should get you about 3 patties.
- Heat a cast-iron skillet to medium-high heat. Drizzle oil to coat the bottom of the pan. Place turkey patties into skillet and sear until browned. About 3 minutes. Flip patties on the other side and sear for 1 minute. Using an oven mitt or kitchen towel, place the skillet into the oven and cook turkey burgers for 15 minutes. This will allow your burgers to keep their moisture. Do not overcook your patties! Any longer than 15-20 minutes and your burgers will be as hard as a hockey puck!
- While patties are cooking, make the sauce by combining all ingredients in a blender and pulsing until smooth. If you prefer a sauce with texture, leave the herbs out of the blender and add them after the rest of the ingredients have been blended.
- To assemble your burger, place arugula on the bottom bun then place a cooked turkey patty on top of the arugula. Spoon some sauce over the turkey patty, then top with the top bun.
