When people think of turkey they either think of Thanksgiving or giant turkey legs at fairs and festivals. I think of turkey wings. A child of baked turkey wings for Sunday dinner, I am familiar with how delicious they can be any time of year. As a chef and person who just plain loves food, I think of ways to create new flavors for turkey all the time.

I came up with these grilled turkey wings because warmer weather is here and grilling feels like one of the only “normal” things we can do during a time of social distancing. I have had parking lot parties, garage parties, and patio parties with friends and accomplished proper social distancing.

With limited quantities available in stores, it’s important to start thinking outside of the box when it comes to what we are grilling. I talked with Your Indiana Turkey Farmers and they said that poultry is plentiful and turkey is at the forefront!

Grilled Honey Citrus Turkey Wings

Try these grilled honey citrus turkey wings at your next cookout. They are tender, juicy, and full of flavor. Turkey takes time on the grill, but it is well worth it!

Ingredients

The Brine
  • 3-4 lbs turkey wings
  • 3 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon mustard seed
  • 1/4 cup kosher salt
  • 1 onion, cut into large chunks
  • 2 lemons, juiced
  • Water
The Turkey
  • 1 tablespoon kosher salt
  • 1/2 tablespoon black pepper
  • 1/4 cup vegetable oil
The Sauce
  • 1 orange, juiced and zested
  • 2 lemons, juiced and zested
  • 1 teaspoon granulated garlic
  • 2 tablespoon honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

Brine Day
  1. Combine brine ingredients in a large bowl and fill halfway with lukewarm water. Stir ingredients until seasoning dissolves. Once seasoning has dissolved place turkey wings in the bowl and cover with more water just until wings are completely covered. Cover the bowl with plastic wrap and refrigerate overnight.
Grilling Day
  1. Prepare the grill by preheating it to 400 degrees. While the grill is preparing, remove wings from the grill and place them on a paper towel-lined baking sheet. Use an additional paper towel to press down on the top of the wings, helping them to dry off. This step is important to ensure crispy skin on your wings.
  2. Season the wings with salt and pepper and toss them in vegetable oil until fully coated. Once the grill is preheated to 400 degrees, place the wings on the grill using the side of the grill with indirect heat. Cover the grill with the lid. Cook the wings for 1 hour and 15 minutes, being sure to flip them halfway through.
  3. Prepare the sauce while the wings are grilling. Place sauce ingredients in a small pot and cook until boiling. Reduce heat to medium-low and simmer for 20 minutes. The sauce should begin to thicken. Once the sauce has thickened it can be reduced to a low simmer until ready to use.
  4. Once wings have browned and reached an internal temperature of 165 degrees, place wings on the side of the grill with direct heat. Baste the wings with sauce and allow to grill on each side for just 2-3 minutes. Remove wings from grill and allow to rest for a minimum of 15 minutes before serving.

Notes:

You can also make these spicy by adding 1/4 cup of hot sauce and 1/2 tsp cayenne pepper to the sauce mixture!
