Muffuletta Sandwich Olive Salad

If you’re someone who doesn’t like olives, I challenge you to try this muffuletta sandwich olive salad.  Yes.  It’s packed full of olives, but the flavor goes beyond a salty, briny olive.  There’s a tang and a zest to this salad that will excite any picky palette.

As I stated, there’s more to an olive salad than just olives.  An olive salad is an array of finely chopped ingredients, including banana peppers, giardiniera, capers, and onion.  I prefer to use milder green onions for flavor and color, but you could easily use a shallot instead.

 The brightness from fresh lemon juice and red wine vinegar brings all of these ingredients together to hit the back of the tongue with every bite of a muffuletta sandwich.

There are several olives to choose from that work well in this recipe.  I prefer a green olive.  The grilled olives at Traders Joe’s are absolutely fantastic.  They also carry a lemon-marinated olive from time to time.  I’ve loved basic black olives since I was a kid.  Remember the Book It reading program?  I know you 80’s babies, remember?  I was the weird kid who wanted a mushroom and black olive pizza when I would win the trip to Pizza Hut.  Kalamata olives are another fantastic option.  I was really excited to try Calabrese olives for the first time.  While I was a bit disappointed, I’ve found they are great in this muffuletta olive salad.  Choose 2-3 different varieties to mix into your salad.

Give this salad some time to marinate, and try to mix everything up.  This is a great recipe to make ahead or always have on hand as a condiment.  While this is traditionally made for a muffuletta sandwich, this olive salad is great on a piece of baked fish, grilled chicken, or tossed with warm pasta.

Ingredients

For the Sandwich
  • ½ cup green olives
  • ½ cup black olives
  • ½ cup kalamata olives
  • ½ cup giardiniera
  • ¼ cup banana peppers
  • 3 sprigs green onion
  • 2 cloves garlic
  • 2 tbsp capers
  • 1 ½ tbsp red wine vinegar
  • Juice of 1 lemon
  • 1 tsp oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

Method
  1. Finely mince olives, giardiniera, banana peppers, green onion, garlic, and capers. Dress with vinegar, lemon, and seasoning and toss until combined.
  2. Refrigerate for at least 1 hour up to overnight before using.

Muffuletta Sandwich Olive Salad can be stored in an airtight container and refrigerated for up to 1 month.
