Salmon Patties

I love salmon patties! I grew up on them. Traditionally made with canned salmon, we always had these with rice or fried potatoes and biscuits. I still make these often and have created a recipe that I love using fresh salmon.

These beauties are delicious all by themselves but pair beautifully with my zesty seafood sauce. Serve these with rice, quinoa, or cauliflower rice, and you have a whole meal!

Ingredients

Salmon Patties
  • 1 pound fresh salmon (I buy the skin on cause it’s cheaper)
  • 1 teaspoon olive oil
  • 1 tablespoon extra virgin olive oil, divided
  • 2 teaspoon kosher salt, divided
  • 1 teaspoon cracked black pepper, divided
  • 2 eggs
  • 1/4 cup fresh dill, minced
  • 3 stems green onion, chopped (use the green and white parts)
  • 2 teaspoon seafood seasoning like Old Bay, divided
  • 2 teaspoon granulated garlic, divided
  • 2 sleeves saltine crackers, crushed finely, divided
Zesty Seafood Sauce
  • 1 cup of mayonnaise
  • 1 teaspoon fresh dill, minced
  • 1 teaspoon seafood seasoning, such as old bay
  • 1 teaspoon granulated garlic
  • 2 tablespoon ketchup
  • 20 dashes hot sauce (whatever you have in your pantry)
  • 1/2 teaspoon white wine vinegar
  • 1 lemon, juiced
  • 2 tablespoon capers, minced
  • 1 teaspoon kosher salt

Instructions

  1. To prepare the salmon patties, preheat the oven to 400 degrees. Place the salmon filet on a foil-lined baking sheet and drizzle with 1 teaspoon extra virgin olive oil and season with 1/2 teaspoon kosher salt and 1/2 teaspoon cracked black pepper. Roast salmon for 15 minutes.
  2. While salmon is roasting, prepare the remaining ingredients for your salmon patties. Pour 2 cups of cracker crumbs onto a plate or shallow dish. Toss cracker crumbs with 1 teaspoon seafood seasoning and 1 teaspoon kosher salt.
  3. In a large bowl, flake cooked and skinned salmon with a fork, leaving large chunks. Add eggs, 1 cup of cracker crumbs, green onion, dill, and remaining seasonings to bowl. Gently combine ingredients while trying not to break up salmon pieces anymore. The mixture should hold in your hand while being gently squeezed and not crumble apart.
  4. Prepare a skillet over medium heat. Drizzle in remaining olive oil. Bread each salmon patty with seasoned cracker crumbs and plate into the heated skillet. Sear each side of the salmon patties for 3 minutes. Just until golden brown.
  5. To make the sauce, combine ingredients into a bowl and stir until combined. You can add more hot sauce if you like things spicy!
  6. Enjoy!
