I love making different kinds of meatballs.  There’s one recipe in particular that I claim to take to the grave.  All others, I’m happy to share!  What I love most about meatballs is how you can transform the meat being used with just about any flavor.  Chicken is great for that!  Chicken meatballs are delicious, and with the right flavor combination, they won’t turn out like a terrible dry turkey meatloaf!

Whatever you do, remember that this is just a template for any flavor combination you want.  You can really transform these any way you’d like.  Add some Mexican flavors for a fiesta chicken meatball.  Add some chopped sundried tomatoes and basil for an Italian meatball.  Add some jerk spices for a fun jerk chicken meatball!

Ingredients

Chicken Meatballs
  • 1 lb ground chicken
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup seasoned bread crumbs
  • 1 egg, beaten
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees. Combine all ingredients in a large bowl. Shape meatballs into desired size. I tend to make them about 2″ each. Place meatballs on a large cookie sheet or baking stone. Place meatballs into oven and cook for approx 20 minutes until slightly browned and bubbly around the bottom. Remove from heat and let rest for 10 minutes before serving.
